Manincor is a A 400 year-old wine estate now focussed on biodynamic and sustainable viticulture as the best vehicle for expressing the many terroirs on the property. This wine comes from the South-facing Keil vineyard at an altitude of 250 meters above sea level. The vineyard is certified biodynamically farmed, old-vine Schiava (also known as Vernatsch) and overlooks Lake Kaltern, from which the DOC takes its name. The old vines are pergola-trained and grown in sandy-clay soils rich in calcium carbonate. Fermentation lasts one week at relatively low temperatures (24° C) with the skins punched down once per day and the wine ages for 5 months in large oak casks to keep the focus on the fruit. Best served cool but not chilled, at 53 – 57 °F, with typical South Tyrolean platters of cold cuts and cheese and even fried fish, it also makes a perfect pasta wine.
A delicately fruity bouquet reminiscent of cherry and toasted almonds; succulent and quaffable with an elegant, fruity finish and an attractive hint of bitterness. –
