Soave Classico is one of the worlds most underrated white wines, with great aging potential as well as elegance and complexity. The Gini family is one of the oldest of the area with documents of the 1600s and 1700s found stating purchases of land and of vineyards. Only natural agricultural practices are used in the certified organic vineyards, with grass left in the aisles between the rows of 100% Garganega vines. After manual harvesting, soft pressing of the whole clusters follows brief skin contact. Alcoholic fermentation with temperature control, without SO2, part in steel and part in French oak (seasoned for at least 3 years) barrels is very slow to preserve the freshness of the fruit flavors. The wine rests for 8 months minimum on the lees in steel vats and in small seasoned oak barrels of a capacity of 228 litres.
