The different grape varieties are vinified separately. Vinification is done by direct pressing, then settling and fermentation with temperature control. Part of the 'Roussanne' (from 10 to 15% of the final blend) is vinified in new barrels. After alcoholic fermentation, the wine is aged with a stirring of lees for about 6 to 7 months to bring boldness and roundness.The other grape varieties are assembled and kept in stainless steel tanks on fine lees until final assembly and bottling.
